At the table

What to eat with it

Truffle pasta, braised beef, aged cheese.

All that tannin and acidity wants rich food: butter, egg pasta, cheese and truffle, the cooking of its home in Piedmont.

Wine with food: the simple rules

Tagliatelle with shaved truffle, a wedge of hard cheese and a glass of brick-red wine
The business side

Nebbiolo is confined to a few thousand hectares of Piedmont. Its late ripening and long aging requirements load producers with working capital; its cru system has pushed land prices for the famous vineyards toward Burgundian levels. Regional grape prices for Nebbiolo da Barolo are reported by the Cuneo chamber of commerce and are among the highest in Italy.
